Everyone around the world has been in lockdown and has been quarantined throughout the COVID-19 pandemic. You can only watch so much TV, make so many crafts, and go on so many virtual hangouts.
To make the time go by fast during the day, people downloaded the rising social media app called TikTok. It is a platform that people get lost scrolling through but helped people forget what was going on in the world.
Something that I got into while in lockdown during 2020 was looking at recipes on TikTok. I was so inspired by people sharing the recipes that they grew up with or that they created. TikTok has the potential to give people a space to be themselves that a lot of social networks do not have anymore.
Social media has become so structured that you can’t post anything without being worried about what people are going to say. TikTok also has those factors, however, people are ignoring the trolls and posting whatever makes them happy. And, people have been posting content that Instagram, Facebook, and other platforms do not see.
Here are a few more recipes that blew up throughout the months of March and April of 2020 that I had to try.
Frothed Coffee
- 2 Tbsp instant coffee
- 2 Tbsp sugar
- 2 Tbsp hot water
- 3/4 cup hot or iced milk
Combine coffee, sugar, and hot water in a large bowl. The best thing to do is use an electric mixer or whisk it by hand. It will take a long time! Mix until frothy, it should look like whipped cream. Then you just add the mixture with your milk and enjoy!
Homemade Coffee Cake
- 8 Tbsp unsalted butter at room temperature
- 1 1/2 cups of sugar
- 2 large eggs
- 2 Tsp vanilla extract
- 2 1/4 cups of flour
- 1 Tsp of salt
- 2 Tsp of baking powder
- 1/4 Tsp of baking soda
- 1 1/4 cups sour cream
For the crumble topping:
- 1/3 cup of sugar
- 1/3 brown sugar
- 2 Tsp cinnamon
- 8 Tbsp butter, melted
- 1 cup flour
Heat oven to 350 degrees. Prepare the crumble topping (whisk sugar, brown sugar, cinnamon and then add butter and stir to combine. Add flour and use a fork to toss until it’s in crumble form). Mix the butter, sugar, and eggs for the cake. Beat in the dry ingredients and sour cream. Transfer the batter to a 9×13 pan and spread into an even layer. Bake the coffee cake for 40-50 mins.
During quarantine, I developed a love for cooking and trying new recipes. It has helped me relieve stress and makes me very happy.
