  • What is Knife-cut Noodle?

Knife-cut Noodle is a characteristic of traditional pasta in Shanxi province. Cut noodles are popular in Shanxi province and its surrounding areas, is rumored to be the Tang dynasty Prince Chai Shao originated, a variety of flavors of the son of shame, spices to eat, Shanxi Datong cut noodles is the most famous. Shanxi knife-cut noodles in thick thin edge, shaped like willow leaves; outside the entrance of the slip tendons, soft and non-sticky, the more chewing the more fragrant.   • History

There is also an old legend about knife-cut noodles. After the Mongol Tartars invaded Central Plain, the Yuan dynasty was established. Later, “Fengyang County” out of the Zhu Emperor (Hongwu Emperor) reunification of China, the establishment of the Ming dynasty, this “chopped noodles” spread to social vendors, and after many reforms, evolved into a knife-cut noodle.
