Sweet potatoes and banana deliver on carbs and potassium and the added beets provide extra nitrates which are linked to improved athletic performance.<\/p>\n\n\n\n<p>Serving Size: 1 Muffin | Yield: 9 Muffins | Method: Bake<\/p>\n\n\n\n<p>Ingredients:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>1 cup Old fashioned oats<\/li><li>1\/2 cup Cooked sweet potato<\/li><li>1\/2 cup Sliced cooked beets<\/li><li>1 Banana<\/li><li>4 Eggs<\/li><li>1\/4 cup Skim milk<\/li><li>1\/4 cup Unsweetened cocoa powder<\/li><li>1\/3 cup Granulated sugar<\/li><li>2 tbsp Canola oil<\/li><li>1 tsp Baking powder<\/li><li>1\/2 tsp Baking soda<\/li><li>1 tsp Vanilla extract<\/li><li>1 tsp Cinnamon<\/li><li>1\/8 tsp Salt, iodized<\/li><\/ul>\n\n\n\n<p>Directions:<\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>Preheat oven to 350 degrees F. Pre-prep: Grind oats into flour using a blender or food processor and set aside.<\/li><li>Put sweet potato, beets and banana in a food processor or blender and blend until smooth.<\/li><li>Add remaining ingredients, including oat flour, and mix well.<\/li><li>Line muffin tin with paper liners and distribute the batter evenly by pouring or scooping 3 cup batter into 9 muffin cups.<\/li><li>Bake for 20-25 minutes or until a toothpick inserted in the center of the muffin comes out clean.<\/li><li>Let muffins cool completely. Store under refrigeration for up to 5 days or freeze for up to 3 months.
