My dad would make hamburgers, pork chops, brats, grilled chicken and freeze it. He would pack along rice, mash potatoes and canned vegetables too. Of course there would be a whole box of snacks to munch on as well. We would buy the more perishable items such as milk, cheese and fresh fruit\/ vegetables at a grocery store where we were vacationing at.
