{"id":78,"date":"2017-02-22T01:17:28","date_gmt":"2017-02-22T01:17:28","guid":{"rendered":"http:\/\/blogs.uww.edu\/frugalfood\/?p=78"},"modified":"2017-02-23T16:14:42","modified_gmt":"2017-02-23T16:14:42","slug":"zucchini-pizza-boats","status":"publish","type":"post","link":"https:\/\/blogs.uww.edu\/frugalfood\/2017\/02\/22\/zucchini-pizza-boats\/","title":{"rendered":"Zucchini Pizza Boats"},"content":{"rendered":"<p>Alright, on this fine Tuesday I did something I have never dared to do..use veggies to make a pizza. \u00a0I found this recipe on Pinterest that is very intriguing to say the least: zucchini pizza boats. \u00a0Think a regular pizza but flour dough substituted with zucchini. \u00a0Personally, I was skeptical, but if I like zucchini bread then what about and why not zucchini pizza? \u00a0It was a must try. \u00a0And substituting carbs for a veggie..you know what that means. \u00a0Yup, a pizza that is easy on the waistline.<\/p>\n<p>I&#8217;ll reveal my initial reaction in my overall thoughts! \u00a0But, anyways to say the least this recipe is relatively easy and only requires 4 ingredients (a fifth is optional). \u00a0It is also dirt cheap to make for one person.<\/p>\n<p>Overall cost: $3.50<\/p>\n<p>Ingredients:<\/p>\n<p>-1 zucchini (.75 cents)<\/p>\n<p>-1 cup of marinara sauce (.75 cents)<\/p>\n<p>-1.5 cups of mozzarella cheese ($1)<\/p>\n<p>-1\/2 cup of pepperoni \u00a0($1)<\/p>\n<p>-olive oil and other spices (not necessary but optional)<\/p>\n<p>Directions:<\/p>\n<p>1. Preheat oven to 450 degrees<\/p>\n<p>2. Cut zucchini in half horizontally<\/p>\n<p>3.
