Ham & Egg Breakfast Cup

As a college student, we need something fast. Being on the go between work, school, and homework, there needs to be food easily ready and available when you have time. Before class in the morning you need to make sure to put something in your stomach, no matter what it is. I think breakfast is one of the most important meals of the day. It gives you energy to start the day, and helps you get through those long classes. A while back, my Dad wanted to try more egg recipes. We found this one! Super simple to make, warm, and great for leftovers! You can add in whatever veggies or spices you would like, with room for interpretation. Ham and egg cups are a go-to in the morning!

 

12 eggs

1 cup sliced ham

1/2 cup shredded cheese

salt & pepper

 

Preheat oven to 350 degrees. Grab a muffin tin and spray cooking spray into every spot. In the tin, crack open 1 egg into each spot. Take a fork and break each yolk. Sprinkle a small handful of sliced ham and cheese into each tin. Once all 3 ingredients are in the muffin in, put a dash of salt & pepper on top. Bake for about 20 minutes, then enjoy!
